blind tasting
-
to ensure impartial judgment, the product should be served blind — that is, without the taster(s) having seen the label, bottle shape, can or container.
blind tasting may also involve serving the product from a black glass to mask the color of the beverage.
a taster's judgment can be prejudiced by knowing details, such as geographic origin, price, reputation, color, or other considerations.
scientific research has long demonstrated the power of suggestion in perception as well as the strong effects of expectancies.


serving temperature
•    a beverage drink should be served at between 16 and 20 °C (60 and 68 °F).  a drink that is too cold can completely suppress aromas and flavors.
•    serving a drink that has too much ice will water it down and completely dissolve in flavor.


the fizzle -
•    allowing a sparkler to completely discharge the carbon dioxide and a stagnate, flat taste will result

consistency -
•    if the product is to be mixed with alcohol, a fixed alcohol-to-product ratio has to be developed and implemented in every serving. individual formulas have to be developed for each particular mixed-drink combination.
•    develop defined formulas for weak, medium, or strong drinks * Note – the stronger the drink, the colder it should be to loosen the ‘bite’ of alcohol. (16 °C) or (60 °F)
